It's the cooling fan coming on.  Put a 12v bulb on the output of the fan relay and mount the bulb in the dash so you can see when it comes on.  

To reduce the issue, upgrade the alternator, battery and fan wiring and the problem becomes less noticeable.  However every Shelby-Dodge I've ever owned has bobbled every time the damned fan comes on.  It is incredibly annoying.
